A Refreshing Spring Time Meal
Looking for a healthy lunch or snack time alternative this Spring? Check out this lite and easy Summer Snow salad.
Ingredients:
- 1 litre of Summer Snow apple juice
- Rocket & spinach leaves
- Pear (thinly sliced)
- Red onion (thinly sliced)
- Flaked almonds
- Blue cheese (crumbled)
- Lemon juice
- Salt & pepper
- Olive oil
- Vincotto
Method:
Over a low heat, reduce the 1 litre of apple juice down to approximately 250ml. Cool and store in a jar (not all is required for this dish). Place rocket, pear, onion, almonds and blue cheese in a bowl. Dress with a squeeze of lemon, olive oil and a drizzle of vincotto, salt and pepper to taste.
